Along with her partners, Cathy Amato owns and operates 75 Subway restaurants, and 1 Mooyah Burgers restaurant in San Antonio as well as Austin. She most recently opened her new concept, Embers Wood Fire Grill and Bar in San Antonio. These restaurants provide employment opportunities for well over 700 people. She also manages the development of the Subway brand in South Central Texas by selling franchises as well as site selection and leasing. This area consists of 500 restaurants over 63 counties including the cities of San Antonio, Austin, Laredo and Waco. She has received many awards for her contributions to the community as well as restaurant industry.
Outside of business, she is devoted to family, friendships, and any animal that crosses her path. Her passions include reading, exercising, and socializing over great food and drinks. She is married to Charlie Amato and is blessed to have Marcus and Allison as her stepchildren.

Trudy Madan launched Synergyst Research in 2006, Discovery Clinical Trials in 2009 and she has led it to five consecutive appearances on the Inc. magazine list of the nation’s fastest-growing private companies. She also has been recognized on the San Antonio Business Journal’s “40 Under 40” list of young business executives.
Prior to starting her business, she was a senior executive at insurance companies and physicians’ organizations, where she negotiated multi-million-dollar contracts with national hospitals, multi-specialty physician groups and ancillary organizations.
Her expertise includes physician and hospital contracting, strategic business development, marketing, and sales. She also has assisted organizations in obtaining NCQA accreditation.
Trudy holds a Master of Science degree in Healthcare Administration from Texas Woman’s University.
